A deliciously simple salad, bursting with heavenly herbs, fresh citrus and tangy marinated feta. Perfect for the summertime!
1 cup cooked Quinoa, completely cooled
1/2 cup cooked Peas
1 small Red onion
1 zucchini
1 block feta, cubed
Zest and juice of 1 lemon
Big handful mint
Big handful basil
Extra virgin olive oil
1 bag mixed salad leaves
1 avocado
1 orange, peeled & segmented
1/2 cup toasted cashew nuts
Thinly slice red onion, and use a peeler to slice zucchini into ribbons
Put cubed feta in a bowl with the lemon juice and zest, chopped mint, chopped basil, a generous glug of olive oil. Season with salt and pepper and mix gently.
Arrange salad leaves on a large platter and spoon over the quinoa and add zucchini ribbons, red onion and peas
Top with chunks of avocado, orange segments, and spoon over herby lemon feta mix
To serve, sprinkle over toasted cashew nuts
