Ingredients

1 packet Makikihi potato jacket fries

1 Tbsp curry powder

2 tsp oil

1 packet paneer

½ bunch coriander

¼ cup thick Greek yoghurt

½ cup mayonnaise

1 green chilli, chopped, plus extra for serving (optional)

1-2 Tbsp Cassia chaat masala, plus extra for serving

Goan green chilli jam

Method

Preheat the oven to 230°C.

On a baking paper-lined tray, spread out the fries and scatter over 1½ teaspoons of the curry powder. Toss well to combine. Sprinkle with salt and put into the oven. Bake for 15 minutes.

Meanwhile, crumble the paneer and toss with the oil and the remaining curry powder. Scatter over the fries after 15 minutes and bake for a further 15 minutes.

Use a stick blender to combine most of the coriander (keep a few leaves for garnishing) together with the yoghurt, mayonnaise, and green chilli.

To serve, drizzle the hot fries with some green chilli jam, and plenty of the coriander green sauce. Sprinkle with the chaat masala and remaining green chilli and tuck in!
